With a prep time of just 15 minutes, you can make burgers to feed 4 and have them cooked in another 10. Or, prepare them in advance so they are ready to be cooked and served.
1 drained 15 ounce can butter beans
1 chopped small yellow or vidalia onion
1/2 cup shredded Cheddar cheese
1 beaten egg
6 crushed saltine style crackers
1 tablespoon finely chopped jalapeno pepper
1/4 teaspoon garlic powder
salt and pepper to taste
1/4 cup vegetable oil
In a mid-size bowl, smash butter beans to a clay-like mush. Add onion, jalapeno pepper, crushed crackers, egg, cheese, garlic powder, salt and pepper. Mix well and form into 4 patties roughly the shape of your bread slices or sandwich buns.
In a large skillet heat the oil over a medium-high flame or heat; use enough oil for 1/4 inch depth. Fry patties for about 5 minutes on each side, until golden. Need to whip up a quick, easy meal that will be pleasing to the whole family? Try a ready-in-25-minutes butter bean burger!
